Giovanni Pilu and his wife Marilyn Annecchini's Sardinian fine-dining room on the rocks at Freshwater Beach, north of Manly, opened 2004 and held at two hats every year since 2005. The signature suckling pig (porceddu) needs twenty-four hours' notice; the rest of the menu reads as serious modern-traditional Sardinian cooking, not the trattoria the room suggests.
