Michael and Judy McMahon opened Catalina in 1994 on the lawn at Lyne Park, on the original Rose Bay flying-boat base from which Qantas Empire ran flights to London until 1974. Daughter Kate now runs events; the kitchen is led by Executive Chef Mark Axisa (since 2015, an apprentice in 1994) and Head Chef Alan O'Keeffe (Dublin-trained at the Merrion, joined 2008). One hat. The Pacific oyster at the bar, the harbour view, and the room's 1994-vintage style are the consistent argument; the daytime is the better light, and the lunch is the booking that uses it.— Yarranabbe Editorial
